Biotechnological recovery from waste from the apple cider (Malus domestica) production process

A biotechnological valuation of agro-industrial waste from the apple cider process was carried out, through the elaboration of a Dietary Fiber Supplement (SFD). The use was carried out combining operations of washing, pulping, macerating, pressing, dehydrating, and grinding. DFS was characterized by physicochemical and functional analysis. It was observed that said supplement has absorption, retention and swelling capacity values of 2.95; 0.07 and 0.9 mL water / g of powdered supplement respectively; while the moisture content was 4.34%, ideal for prolonged storage. Based on the results obtained, it was concluded that the use of residues from cider processing may be suitable for application as an input for drinks such as juices, yogurts, bakery and other types of soft foods.
